Aspect: Rounded and flattened at the base, with a crust
1 to 2 mm thick, hard, and crispy. Very dark brown crust, very dark brown
crumb, with a soft, consistent, and alveolar texture. May contain brick marks
and traces of charcoal on its base.
Smell: Crust and crumb have an
intense aroma of cereals and yeast, with the scent of rye standing out.
Taste: Predominantly tastes of toasted cereal, with low
salt content, a crumb with high moisture content, and a light rye flavor.
CONSERVATION CONDITIONS:
The product should be stored in a cool, dry place, and outside the packaging.
