Appearance: Rounded and flattened at the
base, with a 1 to 2 mm thick, hard, and crispy crust. The crust ranges from
light to dark brown, while the crumb is light brown to beige, exhibiting a
soft, consistent, and alveolar texture. It may feature brick marks and traces
of charcoal on its base.
Smell: Both the crust and crumb have
an intense aroma of cereals and yeast.
Taste: The flavor is predominantly of flour, with low
salt content, and the crumb has a high moisture content.
