AUTUMN CAKE WITH LEFTOVER RIO MAIOR BREAD

Serves 3 People

INGREDIENTS:

200g of leftover Rio Maior Bread, cubed;
3 Eggs;
50g Sugar;
50g Butter;
300ml Milk;
1 teaspoon Baking Powder;
250g crystallized fruits.

PREPARATION:

1. Preheat the convection oven to 180 degrees, for 5 minutes; 
2. Grease a mold and dust with flour;
3. Blend eggs, sugar, and butter for 1 minute in a blender until a creamy mixture is formed;
4. Add leftover bread and milk, blend until all the bread is crushed;
5. Add baking powder and blend for an additional 15 seconds.
6. Mix crystallized fruits into the batter, reserving some for the topping.
7. Pour the batter into the mold and bake for 35 minutes at 180º.
