INGREDIENTS:
150g of Rio Maior Bread (crumb);
250g of Condensed Milk;
100g of Margarine;
500ml of Milk;
4 Eggs;
2 Teaspoons of Vanilla Essence;
1 Teaspoon of Cinnamon;
2 Lemon Zests;
A pinch of Salt;
2 Tablespoons of Port Wine;
Caramel for greasing.
PREPARATION:
1. In a saucepan, heat the milk with the 2 lemon zests, vanilla essence, and cinnamon.
2. Remove the crumb from Rio Maior Bread and grind it.
3. Place the bread in a bowl and add condensed milk and melted margarine. Mix everything together.
4. Pour the boiled milk over the mixture. Let it cool.
5. Add the eggs one at a time, stirring continuously, and add the Port Wine.
6. Preheat the oven to 180°C and grease the pudding mold with caramel.
7. Bake the pudding in a water bath for 50 minutes to 1 hour.
8. Let it cool before unmolding.
Tip: You can add raisins and replace the Port Wine with another beverage of your choice, such as a liqueur.
