BREAD PUDDING WITH RIO MAIOR BREAD AND FRUITS

Serves 4  People

INGREDIENTS:

300g of Rio Maior Bread; 
Wild Blackberries to taste; 
2 Plums;
 2 Pears; 
1 Peach; 
4 tablespoons of Butter;
4 Large Eggs; 
1 cup of Sugar; 
300ml of Milk; 
200ml of Cream; 
Zest of 1 Lemon; 
Brown Sugar to taste.

PREPARATION:

1. Peel and cut the fruit;
2. Use 300g of Rio Maior Bread (hard, for example), remove the crust, and cut into cubes;
3. Add the previously cut fruit and arrange it among the bread cubes;
4. Melt 4 tablespoons of butter in the microwave and set aside;
5. Lightly beat the 4 eggs with a cup of sugar;
6. Mix in a bowl 300ml of milk, 200ml of cream, and the lemon zest;
7. Pour the mixture over the fruit and bread. Let it settle and brush everything with butter and add the egg cream;
8. Sprinkle with brown sugar and bake in a preheated oven at 160º for 35 minutes.
