INGREDIENTS:
150 g of Rio Maior bread;
500 ml of milk;
250 g of sugar;
4 eggs;
1/2 teaspoon of cinnamon;
Lemon zest.
PREPARATION:
1. Cut the Rio Maior bread into small pieces, place them in a bowl, and add the milk. Let it sit for 15 minutes to soften the bread.
2. Add the lemon zest, sugar, eggs, and cinnamon. Blend everything well until you achieve a smooth mixture.
3. Caramelize the pudding mold, pour in the mixture, and cook in a water bath on low heat for 40 minutes.
