GARLIC AÇORDA WITH FRIED SQUID

INGREDIENTS:

400g Rio Maior Bread;
600g Squid;
150g Garlic;
30g Fresh Parsley;
1 Egg;
White Wine (to taste);
Olive Oil (to taste);
Black Pepper (to taste);
Lemon (to taste);
Salt (to taste);

PREPARATION:

1. Cut the Rio Maior Bread into small pieces and set aside;
2. Boil the squid and set it aside;
3. Use the squid cooking water to prepare the açorda: add olive oil, salt, chopped garlic, the bread pieces, egg yolk, and chopped parsley;
4. Fry the squid with garlic, lemon, white wine, black pepper, and parsley.
