"Codfish with Cornbread"
Duration: 70 minutes
Serves 5 people
Ingredients
350g cornbread, cut into pieces;
70g red bell pepper, chopped;
70g green bell pepper, chopped;
3 garlic cloves;
800g water;
1 tsp salt;
550g red-skinned potatoes, sliced;
4 eggs;
500g salted codfish, soaked and shredded;
Olive oil for drizzling;
Preparation
1. Preheat the oven to 180°C (350°F).
2. In a food processor, combine the cornbread, bell peppers, and garlic. Pulse until finely ground. Set aside.
3. In a pot, bring water to a boil and add salt, potatoes, eggs, and codfish.
4. Peel and slice the boiled eggs.
5. In a baking dish, layer the codfish, potatoes, sliced eggs, and drizzle with olive oil. Repeat the layers and finish with a layer of the reserved cornbread mixture.
6. Bake in the preheated oven for about 20 minutes, or until golden brown. Serve hot.
