The measurements are of a glass or a cup.
1 Rio Maior Bread
1 Measure of egg whites
1 Measure of sugar
2 Measures of milk
1 Shot of Licor Beirão
1 Dessert spoon of cornstarch
Preparation
1. Start by breaking the bread into pieces and place them in a bowl.
2. Add the egg whites, milk, and Licor Beirão. Blend with a hand blender until smooth.
3. Then add the cornstarch and sugar and blend again.
4. Grease a pudding mold with caramel and pour in the mixture.
5. Bake in the oven at 180ºC for 45 minutes to 1 hour, until the pudding gets a golden color. Cover with aluminum foil to avoid burning.
6. Test with a toothpick to check if the pudding is done.
7. Let it cool and unmold.
Tip: If you don't have only egg whites, you can use whole eggs.
