SHRIMP AÇORDA WITH RIO MAIOR BREAD

INGREDIENTS

2 Rio Maior Breads (450g each);
800g Shrimp;
Garlic, as needed;
2 Eggs;
Olive oil, as needed;
Coriander, as needed;
Salt and Paprika, as needed.

PREPARATION

1.
Boil the shrimp in salted water for 5 minutes;
2. Remove the shrimp, peel them, and save the cooking water;
3. Cut the shrimp into pieces and set some aside for final decoration;
4. In a saucepan, over low heat, prepare the sauce with olive oil and minced garlic;
5. When the garlic is golden, add the shrimp cooking water;
6. Add the bread and stir until it is completely soaked;
7. Now add the shrimp, paprika, and season with salt;
8. To finish, add the beaten eggs and mix well;
9. Adjust the seasoning and let it cook for 5 minutes;
10. Remove from heat and garnish with whole shrimp and coriander.
